What happens during a glucose spike

The energy crash after a big carb meal has a mechanism — and you can design meals to avoid it.

The rise

Fast carbohydrates flood your bloodstream with glucose within 15–30 minutes. Your pancreas responds with a large insulin release to move that glucose into cells.

The overshoot

A big insulin surge often clears too much glucose, dropping you below where you started. That reactive dip is the 3pm slump: fatigue, brain fog, irritability and cravings for more sugar.

Repeated spikes matter

Occasional spikes are normal. Repeated daily spikes over years push cells toward insulin resistance — the pathway to type 2 diabetes, fatty liver and cardiovascular disease.

How to flatten it
